Instructions

  1. Prepare the Dal
    Begin by thoroughly washing the Arhar dal (toor dal). In a pressure cooker, add the washed dal along with finely chopped cabbage, grated raw mango, chopped tomato, green chilli, turmeric powder, and salt. Add about 2 1/2 cups of water to the mixture and stir to combine.

  2. Pressure Cook the Mixture
    Close the lid of the pressure cooker and cook the mixture on medium-high heat for 2 to 3 whistles. After the initial cooking time, reduce the flame and allow it to cook for an additional 3 to 4 minutes. Turn off the heat and let the pressure release naturally.

  3. Adjust Consistency
    Once the pressure has been released, open the cooker and check the consistency of the dal. If you prefer a thinner consistency, add a little more water and stir well. Transfer the dal to a serving bowl.

  4. Prepare the Tadka (Tempering)
    In a small tadka pan, heat ghee over medium heat. Add the thinly sliced garlic and sauté until it turns golden brown. This will release a beautiful garlic aroma that enhances the dal’s flavor.

  5. Add the Spices
    Once the garlic is browned, add cumin seeds and dried red chillies to the pan. Sauté for about 10 seconds to allow the spices to release their flavors. Then, add asafoetida (hing) and turn off the heat. Sprinkle in the Kashmiri red chilli powder and mix well.

  6. Combine the Tadka with the Dal
    Pour the hot tadka over the prepared dal and give it a good stir to mix the flavors.

  7. Serve
