Heavenly Rhubarb Cake Recipe 🍰

Ingredients:

2 cups Sugar
1 1/3 cups Sugar
1/2 tsp Ground Cinnamon
5 tbsp Canola Oil
3/4 cup Unsweetened Applesauce
1/2 cup Egg Substitute
1 tsp Baking Soda
1 cup + 2 tbsp Flour
2 cups Rhubarb, diced
1 cup Walnuts, chopped (optional)

Instructions:

  1. Preheat your oven to 350 degrees Fahrenheit.

  2. Coat a 13 X 9 inch pan (glass works best) with non-stick cooking spray.

  3. In a small bowl, combine 2 tablespoons of sugar with 1/2 teaspoon of ground cinnamon. Set aside.

  4. In a large bowl, mix together the remaining 1 1/3 cups of sugar, canola oil, unsweetened applesauce, egg substitute, and sour milk.

  5. In a separate bowl, combine the baking soda and flour. Stir until well mixed.

  6. Gradually add the flour mixture into the wet ingredients, stirring until just combined.

  7. Fold in the diced rhubarb until evenly distributed throughout the batter.

  8. Pour the batter into the prepared pan, spreading it out evenly.

  9. Sprinkle the top of the cake with chopped walnuts if desired, followed by the reserved cinnamon sugar mixture.

  10. Bake in the preheated oven for approximately 40 minutes, or until the top of the cake springs back lightly when touched.

  11. Note: To make sour milk, place 1 tablespoon of vinegar or lemon juice in a liquid measuring cup. Add enough milk to equal one cup. Let the mixture sit for several minutes to allow the milk to curdle. Alternatively, you can use buttermilk in place of sour milk.
