Instructions:

  3. Combine Ingredients in a Pot: In a large pot, combine the chopped green tomatoes, garlic cloves, lemon slices, brown sugar, raisins, candied ginger, salt, cayenne, and cider vinegar.

  4. Bring to a Boil: Place the pot over medium heat and bring the mixture to a gentle boil.

  5. Simmer: Once the mixture reaches a boil, reduce the heat to low and let it simmer. The cooking time may vary depending on the firmness of the tomatoes. Typically, it takes about 1 hour for the tomatoes to become tender.

  6. Pack into Jars: While the chutney is simmering, prepare your jars by washing them thoroughly and sterilizing them. Once the chutney is ready, pack it into hot, sterile jars, leaving some headspace at the top.
