Chatpata Baby Potato Recipe (Spicy Tangy Baby Potatoes)

Ginger-garlic paste 1-1/2 tbsp
Tamarind paste 1-1/2 tbsp
Sugar 1/4 tsp
Water 3 tbsp
Salt To taste
Fresh coriander leaves As required, chopped

Instructions:

  1. Prepare the spice blend: Begin by heating a pan or kadhai and dry-roasting the coriander seeds, cumin seeds, fennel seeds, whole black pepper, and dry red chilies. Toast them for about 30 seconds until aromatic. Allow the mixture to cool before grinding it into a fine powder using a spice grinder.

  2. Cooking the potatoes: In a separate kadhai, heat oil and add a pinch of asafoetida (hing). After about 15 seconds, add the ginger-garlic paste and sautรฉ it for a minute until fragrant.

  3. Add the potatoes: Now, add the boiled and peeled baby potatoes to the pan. Sautรฉ the potatoes for a few minutes until they turn golden and crispy.

  4. Add the tangy and sweet elements: Mix the tamarind paste and sugar with the water, and pour it into the pan with the potatoes. Stir to combine and let it cook for 1 minute to allow the flavors to infuse.

  5. Season and finish cooking: Add the salt and ground spice blend to the potatoes, and mix well. Let it cook for another 2 minutes, ensuring that the potatoes are well coated in the tangy and spicy mixture.

  6. Garnish and serve: Once done, garnish with fresh chopped coriander leaves for a burst of color and flavor. Serve the Chatpata Baby Potatoes hot with a side of Palak Dal and fresh phulkas (flatbreads) for a complete meal.
