Spicy and Sour Baung Fish (Asam Pedas Ikan Baung)

Experience the vibrant flavors of Southeast Asia with this delightful recipe for Asam Pedas Ikan Baung, a spicy and sour fish dish that bursts with tangy and aromatic notes. Ingredients:

  • 2 medium-sized baung fish, cleaned and cut into pieces, rinsed with lime juice
  • 1/2 pineapple, cut into medium chunks
  • 100 grams of okra, washed (approximately 7 pieces)
  • Water as needed for boiling

For the Spice Paste:

  • Red chilies to taste
  • 5 shallots
  • 2 cloves of garlic
  • 1 cm turmeric, peeled
  • 1 cm ginger, peeled
  • 1 cm galangal, crushed
  • 1 stalk lemongrass, cut into 2 parts and crushed
  • 2 kaffir lime leaves
  • 2 bay leaves
  • 2 pieces of asam kandis (dried tamarind)

Seasonings:

  • Salt to taste
  • Sugar to taste
  • Seasoning powder to taste

Instructions:

  1. Prepare the Spice Paste:

    • Blend the red chilies, shallots, garlic, turmeric, ginger, galangal, and lemongrass with a little water until smooth. The water will help in blending the ingredients more easily.
  2. Cook the Fish:

    • In a large pot or kuali, arrange the pieces of baung fish. Pour the spice paste over the fish.
    • Add enough water to the pot to cover the fish. Cook over medium heat.
  3. Add Additional Ingredients:

    • After 5 minutes, introduce the galangal, kaffir lime leaves, bay leaves, lemongrass, asam kandis, salt, sugar, and seasoning powder into the pot.
    • Add the pineapple chunks and okra.
  4. Simmer and Adjust Flavors:

    • Allow the mixture to come to a boil. Once boiling, taste and adjust seasoning as needed.
  5. Final Touches:

    • When the fish is cooked through and the flavors have melded together, turn off the heat.
  6. Serve:

    • Serve hot, enjoying this dish with steamed rice for a complete and satisfying meal.
