Sweet and Sour Chicken (Ayam Asam Manis)

Ingredients

Chicken Marinade

  • 5 pieces of chicken breast, cut into smaller portions
  • 1 teaspoon minced garlic
  • Salt and ground black pepper to taste

Sweet and Sour Sauce

  • 1/2 onion, sliced lengthwise
  • 3 cloves garlic, finely chopped
  • 1/2 carrot, julienned
  • 4 tablespoons tomato sauce
  • 1 tablespoon oyster sauce
  • 1/2 tablespoon sweet soy sauce (kecap manis)
  • 1 tablespoon cornstarch, dissolved in 2 tablespoons water
  • Granulated sugar, salt, and ground black pepper to taste
  • Water as needed
  • Cooking oil for sautéing

Instructions

  1. Marinate the Chicken:

    • In a mixing bowl, combine the chicken pieces with minced garlic, salt, and ground black pepper. Mix well to ensure the chicken is evenly coated with the seasoning. Cover and let it marinate in the refrigerator for at least 2 hours.
  2. Fry the Chicken:

    • Heat a sufficient amount of cooking oil in a pan over medium heat. Fry the marinated chicken pieces briefly until the exterior is golden and slightly crispy. Remove the chicken from the pan and set aside.
  3. Prepare the Sweet and Sour Sauce:

    • In a separate pan, heat a small amount of cooking oil over medium heat. Sauté the sliced onion and chopped garlic until fragrant.
    • Add the julienned carrot to the pan and continue to sauté for a few minutes until the vegetables are slightly tender.
    • Add the fried chicken pieces back into the pan and stir briefly to combine with the sautéed vegetables.
  4. Add the Sauces and Seasonings:

    • Pour in the tomato sauce, oyster sauce, and sweet soy sauce. Stir well to coat the chicken and vegetables evenly.
    • Season with granulated sugar, salt, and ground black pepper to taste. Adjust the seasonings according to your preference.
    • Add water as needed to achieve the desired consistency of the sauce. Bring the mixture to a boil.
  5. Thicken the Sauce:

    • Once the sauce is boiling, pour in the cornstarch mixture while stirring continuously. Continue to cook until the sauce thickens and bubbles.
  6. Serve:

    • Remove the pan from heat and transfer the Sweet and Sour Chicken to a serving dish. Serve hot with steamed rice or your favorite side dish.
