Ingredients:
- 7 green tomatoes
- 1 tablespoon pickling lime
- 5 cups sugar
- 1 1/2 cups white vinegar
- 1 tablespoon whole cloves
- 5 cinnamon sticks
- 1 tablespoon whole allspice
- 1 tablespoon celery seed
- 1/4 teaspoon ground mace
- 3 tablespoons fresh ginger
Instructions:

Prepare the Green Tomatoes:
- Wash the green tomatoes thoroughly, removing any blemishes or bad spots.
- Slice the tomatoes into 1/4″ thick slices.

Soak the Tomatoes:
- In a large glass or plastic bowl, combine 2 gallons of water with pickling lime (avoid metal).
- Add the tomato slices and soak for 24 hours, stirring occasionally.
- Drain the tomatoes, cover them with fresh water, and soak for an additional 4 hours, changing the water every 30 minutes.
- Rinse and drain the tomatoes well.

Prepare the Syrup:
- In a large nonreactive pot, combine the white vinegar and sugar.
- Bring the mixture to a boil over medium heat.

Prepare the Spice Pouch:
- While the syrup is heating, place all the spices in a double layer of rinsed cheesecloth.
- Tie the cheesecloth into a pouch using string.

Infuse the Syrup:
- Place the spice pouch in the boiling syrup.
- Allow the syrup to boil for 15 minutes, infusing it with the spices’ flavors.
- Remove the pot from heat.

Add the Tomatoes:
- Gently stir in the sliced tomatoes.
- Cover the pot with a clean towel and let it stand overnight, stirring occasionally.

Simmer the Tomatoes:
- The next morning, bring the syrup and tomatoes to a simmer over medium heat.
- Gently stir occasionally for about 30 minutes or until the tomatoes become translucent.
- Remove and discard the spice pouch.

Prepare the Canning Jars:
- Sterilize 6 1-pint canning jars and lids according to the manufacturer’s instructions.

Pack the Jars:
- Layer the hot tomatoes into the hot sterilized jars, leaving about 1/2″ of space below the rim.

- Pour the hot syrup over the tomatoes, ensuring they are covered by 1/4″ and leaving 1/4″ of headspace at the top.

Remove Air Bubbles:
- Slide a plastic chopstick or wooden skewer along the inside of each jar to release any trapped air bubbles.
- Tap each jar lightly on the counter to release any remaining bubbles.

Seal the Jars:
- Wipe the rims of the jars with a clean damp cloth to remove any residue.
- Place a hot sterilized lid on each jar and screw on the bands firmly.

- Process the filled jars in a boiling-water bath for 10 minutes.
- Start timing after the water returns to a boil.

Cool and Store:
- Allow the jars to cool completely.
- Ensure that the lids have sealed properly before storing.
- Jars that leak or don’t seal should be refrigerated and consumed within a couple of weeks.
- Sealed jars can be stored at room temperature.
