Sweet and Sour Chicken (Ayam Tumis Asam Manis)

Ingredients:

  • 1/2 kg chicken, cut into pieces
  • 6 shallots
  • 3 garlic cloves
  • 2 tomatoes
  • 2 tablespoons sweet soy sauce (kecap manis)
  • Salt, to taste
  • Pepper, to taste
  • Tamarind paste, to taste
  • Palm sugar, to taste

Instructions:

  1. Marinate and Fry the Chicken:

    • Begin by marinating the chicken pieces with salt and pepper. Once marinated, heat oil in a pan and fry the chicken until golden brown and cooked through. Remove from the pan and set aside.
  2. Prepare the Spice Paste:

    • Peel and finely chop the shallots and garlic. Blend them into a smooth paste.
  3. Slice the Tomatoes:

    • Wash the tomatoes and slice them thinly.
  4. Dissolve Tamarind and Palm Sugar:

    • In a small bowl, dissolve the tamarind paste in a bit of water and add palm sugar to taste. Mix well to combine.
  5. Sauté the Spice Paste:

    • In the same pan used for frying the chicken, heat a little oil over medium heat. Add the blended shallot and garlic paste and sauté until fragrant.
  6. Add Tomatoes:

    • Add the sliced tomatoes to the pan and cook until they start to soften.
  7. Combine Sauces:

    • Pour in the tamarind mixture and add the sweet soy sauce. Stir well to combine.
  8. Add Chicken:

    • Return the fried chicken pieces to the pan. Stir to coat the chicken with the sauce and adjust seasoning with additional salt and pepper if needed.
  9. Simmer:

    • Let the mixture simmer until the sauce thickens and the flavors meld together, allowing the chicken to absorb the rich sauce.
  10. Serve:

    • Once the sauce has reduced and thickened to your liking, remove from heat. Serve the sweet and sour chicken hot with steamed rice.
