Spicy-Sweet Patin Fish Recipe

Ingredients:

  • 5 pieces Patin fish (or any catfish)
  • 6 cloves garlic
  • 4 lime (for juice)
  • 5 bird’s eye chilies (adjust to taste)
  • Salt
  • Pepper
  • Coriander
  • 1 sachet of Royco (seasoning powder)
  • Granulated sugar
  • Water
  • Oil for frying

Instructions:

  1. Prepare the Fish:

    • Start by cleaning the Patin fish thoroughly. Squeeze lime juice over the fish and let it marinate for about 5 minutes. This helps to remove any fishy odor and adds a tangy flavor.
  2. Marinate the Fish:

    • In a blender or food processor, combine 3 cloves of garlic, salt, pepper, and coriander. Blend until smooth. Rub this mixture all over the Patin fish and let it marinate for approximately 15 minutes. This step infuses the fish with aromatic spices and enhances its flavor.
  3. Fry the Fish:

    • Heat oil in a frying pan over medium heat. Once the oil is hot, gently place the marinated fish into the pan. Fry until the fish is golden brown and crispy on the outside. Remove from the pan and drain on paper towels.
  4. Prepare the Spicy-Sweet Sauce:

    • In the same blender or food processor, blend the remaining 3 cloves of garlic with the bird’s eye chilies until finely ground.

    • Gradually add water to the sautéed garlic and chili mixture while stirring. This helps to create a smooth sauce base. Let it simmer for a few minutes.
  6. Combine Fish and Sauce:

    • Add the fried Patin fish to the pan with the sauce. Stir gently to coat the fish evenly with the spicy-sweet sauce. Allow it to simmer until the sauce thickens and begins to bubble.
  7. Season to Taste:

    • Add salt, Royco seasoning powder, granulated sugar, and a splash of soy sauce (if desired) to the sauce. Adjust the seasoning to your taste preference. Stir well and let it cook for a few more minutes until the sauce has thickened.
  8. Serve:

    • Once the sauce has reached the desired consistency and the fish is well-coated, remove from heat. Serve the Spicy-Sweet Patin hot, garnished as desired.
