Asem-Asem Beef Recipe

Ingredients:

  • Beef (quantity as needed)
  • 2 potatoes, peeled and cubed
  • 2 carrots, peeled and sliced
  • 1 ripe tamarind
  • Granulated sugar, to taste
  • Salt, to taste
  • Fried shallots, for garnish
  • Chopped green onions, for garnish
  • Bird’s eye chilies, whole (or sliced if preferred)
  • For the spice mix:
    • 5 shallots, finely chopped
    • 4 cloves garlic, minced
    • 2 segments of galangal, crushed
    • Bay leaves

Instructions:

  1. Prepare the Beef:
    Begin by placing the beef in a pot filled with water. Bring to a boil and cook until the beef is halfway tender.

  2. Prepare the Spice Mix:
    While the beef is cooking, finely chop the shallots and garlic. In a separate pan, heat a little oil and sauté the chopped shallots and garlic along with the crushed galangal and bay leaves until aromatic.

  3. Combine Ingredients:
    Add the sautéed spice mix into the pot with the beef. Stir to combine.

  4. Add Vegetables and Tamarind:
    Introduce the whole bird’s eye chilies (leave them whole for a milder heat), cubed potatoes, and sliced carrots to the pot. Add the tamarind and cook until the vegetables are tender. For the best results, add the carrots first as they take longer to cook.

  5. Season:
    Season with salt and granulated sugar to taste. Stir well and taste the broth, adjusting seasoning as necessary.

  6. Finish and Serve:
    Once the vegetables and beef are tender, add chopped green onions. Cook for a few more minutes until everything is well combined and heated through. Serve the dish hot, garnished with a generous sprinkle of fried shallots.
