Fresh Tamarind Gurame Fish Soup

Ingredients:

  • 1 whole gurame fish (or any suitable fish of your choice)
  • 2 stalks lemongrass, smashed
  • 3 bay leaves
  • 5 kaffir lime leaves
  • 1 red tomato, cut into wedges
  • 3 green tomatoes, cut into wedges
  • 1 lime, for washing the fish
  • 1 lime, juice only, for the soup
  • 10 red bird’s eye chilies, left whole
  • 3 cm ginger, smashed
  • 1 stalk green onion, sliced
  • 4 shallots, thinly sliced
  • 4 garlic cloves, thinly sliced
  • 2 bunches of basil leaves
  • Sugar, to taste
  • Salt, to taste
  • Seasoning, to taste
  • Water, for the soup

Instructions:

  1. Prepare the Fish: Rinse the fish thoroughly and rub with lime juice to remove any fishy odor. Set aside.

  2. Make the Broth: In a pot or deep pan, add enough water to cover the fish. Bring to a boil and add the fish head first. Then, incorporate the lemongrass, bay leaves, kaffir lime leaves, ginger, shallots, and garlic. Let this simmer to infuse the flavors.

  3. Add Tomatoes and Seasonings: Once the broth starts to boil, add the remaining fish parts, red and green tomatoes, sugar, salt, and seasoning. Adjust the flavors to your preference.

  4. Simmer: Allow the soup to cook until the fish is fully done and the flavors meld together. This usually takes a few minutes. Add the lime juice to the soup and stir gently.

  5. Add Basil: Just before serving, add the basil leaves and let them wilt slightly.

  6. Finish and Serve: Turn off the heat after 2 minutes. The soup is now ready to be served. Enjoy the vibrant, tangy, and spicy flavors of this fresh tamarind gurame fish soup!
