Tamarind Rice Recipe from Char’s Kitchen! 🍚

Ingredients:

Quantity Ingredient
1 cup Basmati rice
2 cups Tamarind juice
1/2 tsp Mustard seeds
1/2 tsp Cumin seeds
2 Red chilies
1 Bay leaf
1/4 cup Jaggery
1/4 tsp Turmeric powder
4 Curry leaves
1 cup Peanuts
1 tsp Salt
3 cups Water
Oil (for frying)

Instructions:

  1. Prepare the Rice:

    • Heat a skillet over medium flame.
    • Pour in the water, salt, and turmeric powder, and gently stir in the basmati rice.
    • Bring it to a boil, then lower the flame, partially cover, and cook until all the water has been absorbed by the rice. Be careful not to overcook the rice. Set aside.
  2. Prepare the Seasoning:

    • Heat oil in a frying pan over medium flame.
    • Add the cumin and mustard seeds. Allow them to sizzle and splutter.
    • Once they stop spluttering, add the red chilies, curry leaves, bay leaf, and peanuts.
    • Stir-fry briefly for 10-15 seconds until the nuts turn lightly brown and the curry leaves are aromatic. Remove from heat.
  3. Combine Rice and Seasoning:

    • Add the prepared seasoning to the cooked rice along with the tamarind juice and jaggery (if using).
    • Gently mix everything together.
  4. Final Cooking:

    • Sprinkle a few drops of water on top of the rice mixture.
    • Cover the container with a lid and allow it to cook on simmer for 8 minutes, stirring once in between.
    • This will help all the wonderful flavors of the seasoning and tamarind juice blend well into the cooked rice.
  5. Serve Hot:

    • Once done, remove from heat and serve the Tamarind Rice hot.
