Instructions

  1. Prepare the Spice Paste: In a skillet over medium heat, sauté the ground chili, shallots, garlic, ginger, and candlenuts until fragrant. Set aside.

  2. Cook the Broth: In a large pot, bring the water to a boil. Add the tuna bones along with the tamarind, galangal, bay leaves, kaffir lime leaves, lemongrass, and cardamom. Cook until the tuna is half-cooked.

  3. Combine Ingredients: Once the tuna is partially cooked, add the sautéed spice paste to the pot. Stir well and let the mixture simmer, allowing the flavors to meld. If you prefer a brothier dish, you can adjust the liquid as needed.

  4. Season: Reduce the heat to low and season with salt to taste. Stir to combine and allow the dish to simmer for a few more minutes until the tuna is fully cooked and the flavors are well infused.

  5. Serve: Once cooked, remove from heat and let it rest briefly for the spices to settle. Serve hot over a bed of steamed rice, garnished with additional lime if desired.

Enjoy this delicious Asam Padeh Tulangan Tuna, a wonderful blend of tangy, spicy, and aromatic flavors that brings a taste of Indonesia to your table!
