Instructions:

  1. Prepare the Chicken:

    • Begin by washing the chicken portions thoroughly and pat them dry using paper towels to remove any excess moisture.
  2. Season the Chicken:

    • Lightly coat the chicken pieces with flour, ensuring an even coating.
    • Season generously with sea salt, freshly ground black pepper, and mustard powder, rubbing the seasoning onto the chicken to impart flavor.
  3. Sauté the Chicken:

    • In a flameproof casserole dish, heat the butter and olive oil over medium-high heat until hot but not smoking.
