Ingredients:

  • 3 – 3 1/2 pounds roasting chickens
  • 1/4 cup tarragon leaves
  • 1 1/4 cups milk
  • 1 1/4 tablespoons butter
  • 1/2 pound mushrooms
  • 1 tablespoon cornstarch
  • Salt, to taste
  • Cayenne pepper, to taste

Instructions:

  1. Preheat and Prep:

    • Preheat your oven to 350°F (175°C).
    • Wash the chicken thoroughly, then stuff the cavity with tarragon leaves. Season generously with salt and pepper.
  2. Simmer in Milk:

    • Place the prepared chicken in a large saucepan and pour in the milk.
    • Cover the saucepan and let it simmer over medium heat for about 15 minutes. This helps infuse the chicken with the creamy richness of the milk.
  3. Roast the Chicken:

    • Carefully remove the chicken from the saucepan, reserving the infused milk for later use.

  4. Prepare the Mushroom Gravy:
