Stir-Fried Tempeh and Long Beans in Oyster Sauce

This delightful and easy-to-make dish features tempeh and long beans stir-fried to perfection with a savory oyster sauce. The combination of fresh vegetables, tempeh, and flavorful seasonings makes this a perfect side dish for a quick weeknight meal.

Ingredients

Tempeh 1 block (cubed)
Long beans (kacang panjang) 150g (cut into 2-inch pieces)
Oyster sauce 1 sachet (about 1-2 tbsp)
Green chili peppers (sliced diagonally) 8 pieces
Shallots (sliced) 3 cloves
Garlic (sliced) 2 cloves
Cooking oil 2-3 tbsp

For the spice paste:

Galangal (fresh or dried) 1 thumb-sized piece

Instructions

  1. Prepare the ingredients:

    • Cube the tempeh into bite-sized pieces and set aside.
    • Cut the long beans into 2-inch pieces.
    • Slice the green chilies, shallots, and garlic.
    • Blend or finely grind the spice paste ingredients (shallots, garlic, galangal, white pepper, salt, and MSG) into a smooth paste using a mortar and pestle or food processor.
  2. Stir-fry the aromatics:

    • Heat 2-3 tablespoons of cooking oil in a large pan over medium heat.
    • Once hot, add the sliced garlic, shallots, and green chilies. Stir-fry until the shallots and garlic become fragrant and slightly translucent.
  3. Cook the spice paste:

    • Add the prepared spice paste to the pan and sauté for a few minutes, until fragrant.
    • Add a small amount of water (about 2-3 tablespoons) to prevent the mixture from sticking and help distribute the flavors evenly.
  4. Add the vegetables:

    • Stir in the long beans and cook, stirring occasionally, until the beans begin to soften but still have a slight crunch (about 3-4 minutes).
  5. Add the tempeh:

    • Once the beans are halfway cooked, add the cubed tempeh to the pan.
    • Stir well to combine the ingredients, then add another splash of water and the oyster sauce.
  6. Finish the dish:

    • Continue to stir-fry until the tempeh is golden brown and the long beans are cooked through but not overdone (about 5 more minutes).
    • Adjust seasoning with salt, pepper, or additional oyster sauce to taste.
  7. Serve:

    • Once fully cooked, remove from heat and transfer to a serving plate.
    • Serve warm with steamed rice for a satisfying meal.
