Teriyaki Fried Eggs

Ingredients:

  • 3 large eggs
  • 4 bird’s eye chilies (adjust to taste)
  • 2 stalks green onions
  • 2 shallots
  • 1 clove garlic
  • 2 ripe tomatoes
  • 1 red curly chili
  • 1 green curly chili
  • 3 tablespoons teriyaki sauce
  • 2 tablespoons sweet soy sauce
  • Sugar and salt, to taste
  • A splash of water
  • Butter for frying

Instructions:

  1. Fry the Eggs: Begin by frying the eggs. For a richer flavor, use butter to fry the eggs until they are cooked to your liking. Set the eggs aside once done.

  2. Prepare the Aromatics and Vegetables: Slice the shallots, garlic, bird’s eye chilies, red and green curly chilies, green onions, and tomatoes.

  3. Sauté the Ingredients: Heat a small amount of butter in a skillet over medium heat. Add the sliced shallots and garlic to the pan, cooking until they become fragrant. Next, add the bird’s eye chilies, curly chilies, tomatoes, and green onions to the skillet. Sauté until the vegetables are tender and fragrant.

  4. Add the Sauces and Seasonings: Pour in the teriyaki sauce and sweet soy sauce. Stir in sugar and salt to taste. Add a splash of water to the pan to help blend the flavors and create a bit of sauce.

  5. Combine with the Eggs: Gently add the fried eggs back into the skillet, allowing them to simmer in the sauce mixture. Cook for a few minutes until the eggs have absorbed some of the flavors and the sauce has thickened slightly.

  6. Serve: Transfer the eggs and sauce to a serving dish. For an extra touch of flavor, garnish with crispy fried shallots.
