Kittencal’s Beef or Pork Marinade and Tenderizer

Description:

This incredible marinade, developed almost two decades ago by Kittencal, brings the delightful flavors of teriyaki to your beef or pork, while simultaneously tenderizing the meat to perfection. Forget the notion that marinades are just for flavor – this recipe proves otherwise! Whether you’re grilling up a London Broil, preparing succulent kabobs, or savoring a pork tenderloin, this marinade guarantees exceptional taste and tenderness. The longer your meat marinates, the more tender and juicy it becomes, so be sure to plan ahead for a minimum of 8 hours in the fridge, or ideally up to 24 hours for maximum flavor infusion.

Ingredients:

  • 1/3 cup soy sauce
  • 1/4 cup red wine vinegar
  • 3/4 cup cider vinegar
  • 2 – 3 tablespoons olive oil
  • 1 bulb garlic, minced
  • 1/2 teaspoon black pepper
  • 4 teaspoons ginger powder
  • 3 tablespoons liquid honey
  • 2 tablespoons Worcestershire sauce

Instructions:

Step Instructions
1 In a large bowl, combine all ingredients except the meat. Mix or whisk until thoroughly combined.
2 You may transfer the marinade to a large resealable plastic bag or leave it in the bowl.
3 Pierce the meat all over with a fork to allow the marinade to penetrate deeply.
4 Add the meat to the marinade, ensuring it’s fully coated.
5 Refrigerate for a minimum of 8 hours, or preferably overnight, to allow the flavors to meld and tenderize the meat.
6 Remove the meat from the marinade, discarding any excess liquid.
7 Allow the beef or pork to sit out on the counter until it reaches almost room temperature. This crucial step relaxes the meat fibers, resulting in a more tender and juicy final dish.
8 Grill or oven-broil the meat to your desired level of doneness.

Tips:

  • For even more tender meat, consider doubling or tripling the marinade ingredients.
  • If scaling up the recipe, reduce the soy sauce slightly, and maintain the garlic at 2-3 tablespoons for optimal flavor balance.
  • While powdered meat tenderizer is optional, it can enhance the tenderness of your meat even further.
  • Ensure you’re using pure honey rather than substitutes for the best tenderizing results.
  • Experiment with adding 1 teaspoon of dry mustard powder for an extra kick of flavor.
  • Remember that allowing the meat to reach almost room temperature before cooking is a crucial step in achieving the perfect texture.
