Instructions:

  1. Prepare the Vegetables: Start by washing the baby carrots thoroughly under cold running water. Once clean, place them on a cutting board and trim the ends using a small knife. For the snap peas, remove the tough ends and rinse them under water.

  2. Blanch the Snap Peas: Bring a pot of salted water to a boil. Once the water is almost boiling, add the snap peas and cook them for 5 minutes, just enough to soften them without losing their crispness. Afterward, drain the peas, keeping the cooking water aside. Let the peas sit in the colander to cool and drain any excess water.

  3. Cook the Baby Carrots: In the same pot of water you used for the snap peas, blanch the baby carrots for 7-8 minutes, or until they are tender but still firm. Drain them thoroughly and set aside.

  4. Prepare the Shrimp: While the vegetables are cooking, clean the shrimp. Gently remove the dark vein (the digestive tract) using a toothpick. Once the shrimp are prepped, heat a large skillet or frying pan over high heat and add a little olive oil. Quickly sauté the shrimp for 2 minutes on each side, flipping them with tongs for even cooking.

  5. Combine the Ingredients: When the shrimp are cooked, add the snap peas and baby carrots to the pan. Pour in the teriyaki sauce, stirring well to coat the shrimp and vegetables in the rich, savory sauce. Season with black pepper to taste. Allow everything to simmer for 2-3 minutes, ensuring that the flavors meld together.

  6. Finish and Serve: Once the shrimp are perfectly glazed with the teriyaki sauce and the vegetables are tender, remove the pan from the heat. Sprinkle a sprig of fresh thyme over the dish for added aroma and flavor. Serve the sautéed shrimp with snap peas and baby carrots hot, garnished with a light drizzle of olive oil if desired.
