Ingredients:

Quantity Ingredient
1 tbsp Canola oil
1 Scallion
1 can Canned whole kernel corn
1/2 cup Frozen chopped spinach
7 Eggs
1/2 tsp Salt
3/4 cup Cheddar cheese, shredded
3/4 cup Monterey Jack pepper cheese, shredded
8 Flour tortillas

Instructions:

  1. Preheat oven to 350 degrees.

  2. Scramble 7 eggs and add salt.

  3. Heat oil in a large skillet over medium heat.

  4. Add scallions and corn to the skillet. Cook and stir for 2-3 minutes until tender.

  5. Add frozen chopped spinach to the skillet. Stir and cook until spinach is heated through.

  6. Pour scrambled eggs into the skillet. Use a spatula to gently pull in the eggs from the sides of the skillet towards the center as they cook, ensuring they remain fluffy. Be careful not to let the eggs get dry.

  7. Once the eggs are cooked, remove the skillet from heat and stir in ¼ cup each of shredded cheddar cheese and Monterey Jack pepper cheese until melted and well combined.

  8. Spoon the egg and vegetable mixture evenly down the center of each flour tortilla. Roll up the tortillas and place them seam side down in a 13×9 inch baking dish.

  9. Sprinkle the remaining shredded cheeses over the top of the rolled enchiladas.

  10. Bake uncovered in the preheated oven for about 10 minutes, or until the cheese is melted and bubbly.

  11. Once done, remove from the oven and serve hot.
