Instructions 📝
-
Prepare the Marinade:
- In a large resealable plastic bag, combine 1/2 cup lemon juice, 1/4 cup barbecue sauce, and 1 tablespoon taco seasoning. Seal the bag and shake vigorously to mix all the ingredients well. 🌪️
-
Marinate the Chicken:
- Add 2 pounds of chicken pieces into the bag. Seal the bag again, ensuring that the chicken is well coated with the marinade.
- Place the bag in the refrigerator and let the chicken marinate for at least 2 hours. This will allow the flavors to penetrate the meat, making it juicy and flavorful. 🕒
-
Cook the Chicken:
- After marinating, remove the chicken from the bag, shaking off any excess marinade.
- You can choose to either bake or grill the chicken:
- To Bake: Preheat your oven to 375°F (190°C). Place the chicken pieces on a baking sheet lined with parchment paper or lightly greased. Bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- To Grill: Preheat your grill to medium-high heat. Grill the chicken pieces for 6-8 minutes per side, or until fully cooked and the juices run clear. 🏡
-
Serve:
- Let the chicken rest for a few minutes before serving. This will help retain its juices and keep it tender.
- Enjoy your delicious San Antonio Barbecue Chicken with your favorite side dishes. Perhaps a fresh garden salad, some roasted vegetables, or a classic potato salad. 🍽️
Notes 📝
- This recipe is perfect for a quick weeknight dinner or a weekend barbecue with friends and family.
- Feel free to adjust the seasoning according to your taste. If you prefer a spicier kick, add a dash of cayenne pepper or hot sauce to the marinade. 🌶️
