Instructions:

  1. Prepare Fillings and Topping:

    • Get creative with your fillings! Prepare your desired fillings and topping options, and set them aside until ready to use.
  2. Prepare Posypka Topping:

    • Mix all topping ingredients until the mixture resembles coarse meal. Set aside for later use.
  3. Poppyseed Filling:

    • Combine poppy seeds, sugar, and milk in a saucepan.
    • Cook over medium heat until the mixture thickens.
    • Add butter and dissolved flour, stirring constantly until the poppy seed mixture is done, approximately 30 minutes.
    • Allow the filling to cool before using. Any leftovers can be frozen for future use.
  4. Cabbage Filling:

    • Fry the cabbage in butter until soft.
    • Add salt, black pepper, sugar, and flour, and fry until golden brown, taking care not to burn the mixture.
  5. Prune Filling:

    • Place dried pitted prunes in a bowl and cover them completely with boiling water.
    • Let them sit overnight or for at least 6 hours to rehydrate.
    • Drain the liquid and mash the prunes thoroughly with a fork or food processor.
    • Add cinnamon, sugar, and lemon zest, mixing thoroughly. This filling is perfect for 24 kolaches.
  6. Apricot Filling:

    • Cook a 10-ounce package of dried apricots slowly in enough water to cover until the fruit is soft and the water has evaporated.
    • Add 1 1/2 cups of sugar or more to taste, and mash the apricots until well blended. This makes filling for about 2 dozen kolaches.
  7. Cottage Cheese Filling:

    • Mix all ingredients until well blended.
    • If the cheese is too moist, add finely rolled crackers to absorb excess liquid.
    • If using country-style cottage cheese, cream cheese can be omitted or used for added flavor, according to taste.
  8. Dough Preparation and Assembly:

    • Dissolve yeast in 1/2 cup warm water in a tall glass, sprinkle with 1 teaspoon sugar, and set aside to proof.
    • In a large bowl, cream sugar and butter. Add egg yolks and salt, mixing well.
    • Incorporate the dissolved yeast and 1 cup of flour slowly using an electric mixer.
    • Add milk and continue adding remaining flour until a moderately soft dough forms.
    • Knead the dough until smooth and elastic, approximately 5 minutes.
    • Place the dough in a greased bowl, cover, and let it rise until doubled in bulk, about 1 to 1 1/2 hours.
    • Punch the dough down and turn it out onto a lightly floured surface.
    • Pinch off egg-sized portions and roll them into balls.
    • Place the dough balls about 1 inch apart on greased pans.
    • Brush kolaches with melted butter, cover with a cloth, and let them rise until light, about 1 hour.
    • Use your fingers to make an indentation in each ball and fill each opening with about 1 tablespoon of filling.
    • Sprinkle with posypka topping if desired and let rise again for 20 minutes.
    • Bake in a preheated 425°F oven for about 10-15 minutes.
    • Brush kolaches with melted butter as they come out of the oven for added flavor and shine.
