Ayam Kemangi: A Fragrant Thai Basil Chicken Dish

Ingredients:

  • 1/2 kg chicken, cut into pieces
  • 5 cloves garlic, finely chopped
  • 7 shallots, thinly sliced
  • 1 bunch Thai basil (kemangi), roughly chopped
  • Red chilies, to taste
  • 3 kaffir lime leaves
  • 1 tomato, chopped
  • Salt, to taste
  • Seasoning powder (such as Ro*co), to taste
  • Cooking oil

Instructions:

  1. Prepare the Chicken and Vegetables:

    • Cut the chicken into bite-sized pieces according to your preference.
    • Finely chop the garlic and slice the shallots. Set aside.
    • Chop the red chilies and tomato. If you prefer a spicier dish, adjust the amount of chilies to taste.
  2. Cook the Aromatics:

    • Heat a generous amount of cooking oil in a large skillet or wok over medium heat.
    • Add the garlic, shallots, red chilies, and tomato to the hot oil.
    • Sauté the mixture until the garlic and shallots become fragrant and translucent, and the tomatoes start to break down.
  3. Add the Chicken:

    • Increase the heat to medium-high and add the cut chicken pieces to the skillet.
    • Stir well to coat the chicken with the aromatics.
    • Pour in enough water to just cover the chicken. Stir to combine.
  4. Season the Dish:

    • Add salt and seasoning powder (such as Ro*co) to taste. Adjust the seasoning according to your preference.
    • Add the kaffir lime leaves for an additional layer of aromatic flavor.
    • Allow the mixture to simmer gently until the chicken is cooked through and tender, and the sauce has slightly reduced.
  5. Incorporate Thai Basil:

    • Once the chicken is cooked and the flavors are well-developed, add the chopped Thai basil to the skillet.
    • Stir gently and cook for another 1-2 minutes, or until the basil releases its fragrant aroma.
  6. Serve:

    • Your Ayam Kemangi is now ready to be served.
    • Garnish with additional Thai basil if desired.
    • Enjoy this flavorful dish with steamed rice or as part of a larger Thai meal.

This Ayam Kemangi recipe brings together the vibrant flavors of Thai basil with tender chicken, making it a delightful addition to any meal. The blend of garlic, shallots, and chilies with the aromatic kaffir lime leaves creates a dish that’s both fragrant and satisfying.
