Ikan Kembung Bumbu Kuning with Lemongrass and Thai Basil
Ingredients:
- 1/2 kg mackerel fish (approximately 4 fish)
- Spice Paste:
- 8 shallots
- 5 cloves garlic
- 5 red bird’s eye chilies (adjust to taste)
- 1/2 teaspoon coriander seeds (whole)
- 3 candlenuts
- Black pepper to taste
- 5 cm fresh turmeric (peeled and chopped)
- Crushed Aromatics:
- Galangal
- Ginger
- Lemongrass
- Sliced Ingredients:
- 5 green bird’s eye chilies
- 3 red bird’s eye chilies
- 1 tomato
- 2 stalks green onions
- Additional Ingredients:
- 3 kaffir lime leaves
- Palm sugar to taste
- Seasoning powder (optional)
- Mineral water
- 2 bunches Thai basil

Prepare the Fish:
- Clean the mackerel thoroughly and rub it with lime juice. Allow it to marinate for about 10-15 minutes. Rinse under running water, then pat dry. Fry the fish until golden brown, taking care not to overcook.
