Thai Basil Mackerel in Golden Turmeric Sauce

Ikan Kembung Bumbu Kuning with Lemongrass and Thai Basil

Ingredients:

  • 1/2 kg mackerel fish (approximately 4 fish)
  • Spice Paste:
    • 8 shallots
    • 5 cloves garlic
    • 5 red bird’s eye chilies (adjust to taste)
    • 1/2 teaspoon coriander seeds (whole)
    • 3 candlenuts
    • Black pepper to taste
    • 5 cm fresh turmeric (peeled and chopped)
  • Crushed Aromatics:
    • Galangal
    • Ginger
    • Lemongrass
  • Sliced Ingredients:
    • 5 green bird’s eye chilies
    • 3 red bird’s eye chilies
    • 1 tomato
    • 2 stalks green onions
  • Additional Ingredients:
    • 3 kaffir lime leaves
    • Palm sugar to taste
    • Seasoning powder (optional)
    • Mineral water
    • 2 bunches Thai basil

Instructions:

  1. Prepare the Fish:

    • Clean the mackerel thoroughly and rub it with lime juice. Allow it to marinate for about 10-15 minutes. Rinse under running water, then pat dry. Fry the fish until golden brown, taking care not to overcook.
  2. Make the Spice Paste:

    • In a blender or food processor, combine the shallots, garlic, red bird’s eye chilies, coriander seeds, candlenuts, black pepper, and fresh turmeric. Blend into a smooth paste.
  3. Cook the Spice Paste:

    • Heat a little oil in a pan over medium heat. Add the spice paste and sauté until fragrant.
  4. Add Aromatics:

    • Add the lemongrass, galangal, ginger, kaffir lime leaves, sliced green and red chilies, tomato, and green onions. Stir well to combine.
  5. Simmer the Dish:

    • Pour in enough mineral water to create a sauce. Stir well and let it come to a gentle simmer.
  6. Add the Fish:

    • Carefully place the fried mackerel into the pan. Allow it to cook until the sauce has reduced and thickened to your liking.
  7. Finish with Thai Basil:

    • Add the Thai basil leaves and adjust the seasoning with palm sugar and seasoning powder as needed.
  8. Serve:

    • Once the sauce has thickened and the flavors have melded, the dish is ready to serve. Enjoy your fragrant and flavorful Ikan Kembung Bumbu Kuning!
