Description:

A neat trick for BBQing the thighs is to place them in a wire BBQ frame used for fish, burgers etc then you can flip them all at once. This recipe offers beautiful flavor with crisp skin, making it perfect for lunch or snacks. Time does not include the marinade time. Serve as an appetizer then it serves 6.

Ingredients:

  • 6 chicken thighs
  • 2 garlic cloves
  • 1 fresh ginger
  • 2 tbsp black peppercorns
  • 2 tbsp fresh coriander
  • 2 tbsp thick soy sauce
  • 2 tbsp olive oil
  • 1 1/2 tbsp sugar

Recipe Instructions:

  1. Prick the thighs all over.
  2. Blend the garlic, ginger, coriander, and peppercorns to a paste.
  3. Rub the paste into the chicken.

  5. Mix soy sauce and olive oil.
  6. Baste the chicken with the soy mixture.
