Cashew nuts (finely chopped) 1 tablespoon
Melon seeds 1 tablespoon
Saffron strands 1/2 teaspoon
Cinnamon Powder (Dalchini) 1/2 teaspoon
Nutmeg powder 1/2 teaspoon
Fennel seeds (Saunf, powdered) 1/2 teaspoon
Badam (Almond, coarsely powdered) 12
Pistachios (coarsely powdered) 15
Poppy seeds (powdered) 1 tablespoon
Whole Black Peppercorns (powdered) 3
Rose Petals 1 tablespoon
Sugar (to taste) As required
Cardamom Powder (Elaichi) 1/4 teaspoon

Instructions

For the Galette Dough:

  1. In a large mixing bowl, combine the whole wheat flour, salt, sugar, and cold butter. Use your fingers to rub the butter into the flour mixture until it resembles coarse crumbs.
  2. Gradually add the curd (yogurt) to the mixture, little by little, and knead until the dough comes together into a round ball (similar to chapati dough).
  3. Cover the dough with cling film and refrigerate for about 30 minutes to allow it to rest.

For the Thandai Mix:

  1. In a separate bowl, combine the cashew nuts, melon seeds, saffron strands, cinnamon powder, nutmeg powder, fennel powder, badam, pistachios, poppy seeds, black pepper, rose petals, and cardamom powder.
  2. Mix everything thoroughly and store the thandai powder in an airtight container until ready to use.

Assembling the Galettes:

  1. Preheat your oven to 200°C (392°F) for 10 minutes.
  2. Once the dough has rested, divide it into small balls. Roll each ball into a small round circle.
  3. Place slices of nectarine (or orange, depending on your choice) in the center of each dough circle.
  4. Sprinkle a little of the prepared thandai powder over the nectarines.
  5. Gently fold the edges of the dough over the fruit, creating a rustic crust around the filling.

Baking the Galette:

  1. Place the assembled mini galettes on a parchment-lined baking tray.
  2. Bake in the preheated oven for 30 to 35 minutes, or until the galettes are golden brown and the crust is flaky.
