Instructions
For the Galette Dough:
- In a large mixing bowl, combine the whole wheat flour, salt, sugar, and cold butter. Use your fingers to rub the butter into the flour mixture until it resembles coarse crumbs.
- Gradually add the curd (yogurt) to the mixture, little by little, and knead until the dough comes together into a round ball (similar to chapati dough).
- Cover the dough with cling film and refrigerate for about 30 minutes to allow it to rest.
For the Thandai Mix:
- In a separate bowl, combine the cashew nuts, melon seeds, saffron strands, cinnamon powder, nutmeg powder, fennel powder, badam, pistachios, poppy seeds, black pepper, rose petals, and cardamom powder.
- Mix everything thoroughly and store the thandai powder in an airtight container until ready to use.
Assembling the Galettes:
- Preheat your oven to 200°C (392°F) for 10 minutes.
- Once the dough has rested, divide it into small balls. Roll each ball into a small round circle.
- Place slices of nectarine (or orange, depending on your choice) in the center of each dough circle.
- Sprinkle a little of the prepared thandai powder over the nectarines.
- Gently fold the edges of the dough over the fruit, creating a rustic crust around the filling.
Baking the Galette:
- Place the assembled mini galettes on a parchment-lined baking tray.
- Bake in the preheated oven for 30 to 35 minutes, or until the galettes are golden brown and the crust is flaky.
Serving:
- Once baked, remove the galettes from the oven and allow them to cool for a few minutes.
- To enhance the flavor, sprinkle a little more thandai powder on top of each galette before serving.
- Serve warm as a delightful breakfast, brunch, or as a sweet dessert after a meal.
Tips:
- If nectarines are not available, you can substitute them with other fruits like peaches or plums for a different flavor profile.
- The thandai mix can be made in bulk and stored for future use. It adds a wonderful aroma and flavor to many desserts and beverages.
- For an extra indulgent treat, serve the mini galettes with a scoop of vanilla ice cream or a drizzle of honey.
These Thandai Nectarine Mini Galettes are the perfect balance of sweetness, spice, and flaky goodness, making them a must-try recipe for any occasion.
