Ingredients for Tiramisu Frosting

Ingredient Quantity
Mascarpone Cheese (chilled) 250 grams
Icing Sugar 1/2 cup
Baileys Irish Cream 1/4 cup

Preparation Time: 20 minutes

Cook Time: 60 minutes

Total Time: 1 hour 20 minutes

Yield: 12-18 cupcakes

Instructions

  1. Preheat the Oven and Prepare the Pan
Preheat your oven to 180°C (350°F). Line a standard cupcake pan with 12 to 18 cupcake liners, depending on the size of your pan.

  2. Sift Dry Ingredients
In a medium bowl, sift together the whole wheat flour, cocoa powder, cinnamon powder, dry ginger powder, baking powder, and salt. Set this mixture aside.

  3. Prepare Wet Ingredients
In a large mixing bowl or the bowl of a stand mixer with the paddle attachment, beat together the eggs (or flaxmeal egg replacer), oil, brown sugar, yogurt, and honey. Mix until the batter is light, smooth, and fluffy.

  4. Combine Wet and Dry Ingredients
Gradually add the sifted dry ingredients to the wet mixture. Mix until all ingredients are fully incorporated and the batter is smooth and fluffy.

  5. Fill the Cupcake Liners
Spoon the batter into the cupcake liners, filling each about 3/4 full. Be sure not to overfill as the cupcakes need space to rise while baking.

  6. Bake the Cupcakes
Place the cupcakes in the preheated oven and bake for 10 to 15 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Allow the cupcakes to cool completely.

  7. Chill the Cupcakes
Once the cupcakes have cooled, transfer them to an airtight container and refrigerate for about 2 to 3 hours. This chilling step helps the frosting to set and spread more easily.

  8. Prepare the Tiramisu Frosting
While the cupcakes are cooling, prepare the tiramisu frosting. In a large bowl, combine the chilled mascarpone cheese, icing sugar, and Baileys Irish Cream. Use a hand mixer or stand mixer to beat the mixture until smooth and creamy.

  9. Frost the Cupcakes
Once the cupcakes are fully chilled, spoon a dollop of mascarpone frosting onto each one. Use the back of a spoon to swirl the frosting and spread it evenly over the top of each cupcake.

  10. Optional Garnish
For an added touch, sprinkle a little cocoa powder, brown sugar, or edible glitter on top of the frosting to give your cupcakes a festive and elegant appearance.

  11. Serve and Enjoy
Chill the frosted cupcakes for an additional 15 to 20 minutes before serving. These cupcakes are perfect as a dessert for any occasion, particularly summer parties. Serve and enjoy!

Tips and Variations

  • Non-Alcoholic Version: If you prefer a non-alcoholic version of these cupcakes, you can replace the Baileys Irish Cream with a coffee liqueur syrup or a small amount of brewed espresso for a similar flavor.
  • Flaxmeal Egg Replacer: For a vegan option, replace the eggs with flaxmeal egg replacer. Combine 1 tablespoon of ground flaxmeal with 3 tablespoons of water and let it sit for 5 minutes to form a gel-like consistency.
  • Additional Toppings: Consider adding a light dusting of cinnamon or a chocolate drizzle on top of the frosting to enhance the visual appeal and flavor.
  • Cupcake Storage: These cupcakes can be stored in an airtight container in the fridge for up to 3 days. The flavors tend to develop further as they sit, making them even more delicious the next day.
