  2. Make the Egg Crepes: In a separate bowl, whisk together two eggs until well blended. Heat a non-stick skillet over medium heat, adding a small amount of oil if necessary. Pour in a portion of the egg mixture to form a thin layer, cooking until the edges begin to set. Flip and cook the other side briefly until just firm. Repeat this process to create approximately three egg crepes.

  3. Assemble the Rolade: Take one egg crepe and place a generous spoonful of the tofu mixture on top, spreading it evenly. Lay one sausage at the center of the tofu mixture. Carefully fold the sides of the crepe over the filling, then roll it tightly to enclose the filling completely. Wrap the rolled crepe in banana leaves or aluminum foil to secure it.
