Ingredients:
- 1 block tofu (approximately 250g), cut into cubes
- 1 block tempe (approximately 250g), cut into cubes
- 100g bean sprouts
- 2 sausages, sliced on the diagonal
- 3 shallots, finely chopped
- 2 garlic cloves, minced
- 1 thumb-sized piece of galangal, smashed
- 5 small chili peppers (optional, adjust to taste)
- 1 large red chili, sliced on the diagonal
- Soy sauce, to taste
- Salt, to taste
- Ground black pepper, to taste
- Bouillon powder, to taste
- Water, as needed
Instructions:

Prepare the Ingredients: Begin by frying the tofu, tempeh, and sausage slices until they are golden brown, but be cautious not to overcook them to avoid them becoming too dry. Set aside.

Sauté Aromatics: In a large skillet or wok, heat a small amount of oil over medium heat. Add the chopped shallots, minced garlic, smashed galangal, small chili peppers (if using), and sliced red chili. Sauté until the mixture is fragrant and the shallots are translucent.

Add Bean Sprouts: Toss in the bean sprouts and cook briefly, allowing them to soften. Quickly add soy sauce to the pan, which will help the flavors meld together.

Combine Ingredients: Stir in the pre-fried tofu, tempeh, and sausage. Season with salt, ground black pepper, and bouillon powder to taste. Pour in a little water to create a light sauce and mix well to combine.

Adjust and Serve: Taste and adjust the seasoning if needed. Once everything is well-coated and heated through, remove from heat.
