Instructions:

Step 1: Marinating the Tomini
Start by marinating the Tomini (a soft, creamy Italian cheese). In a bowl, combine the extra virgin olive oil, fresh chili, and thyme. Use a brush to evenly coat all sides of the Tomini with the infused oil. Once coated, place the cheese into a tightly sealed jar or container, ensuring it’s fully submerged in the marinade. Let it sit and marinate for at least 30 minutes.

Step 2: Preparing the Butternut Squash
While the Tomini marinates, wash and peel the butternut squash, then slice it into thin rounds, about half a centimeter thick (roughly 7-8 slices). The total weight of the prepared squash should be about 150g. After slicing, sprinkle a pinch of salt over the squash.

Step 3: Roasting the Squash
Preheat your oven to 200°C (392°F) in static mode. Once the oven is ready, spread the sliced squash onto a baking tray in a single layer. Roast the squash for about 15-20 minutes, or until tender and slightly caramelized.

Slice the hamburger buns in half. Place them on a baking tray with the cut side facing upwards. Place the buns in the oven for about 2 minutes, or just until they’re lightly toasted. This step can be done during the final minutes of roasting the squash.

Step 7: Cooking the Tomini
Once the squash is roasted, remove it from the oven. Heat a non-stick pan over low to medium heat. Add the marinated Tomini to the pan and cook each side for about 2 minutes, ensuring the cheese forms a golden crust but remains soft on the inside. Be gentle when flipping the Tomini to avoid breaking it.

Step 8: Assembling the Tomino Burger
Now it’s time to assemble the burgers. Start by spreading the broccoli rabe pesto on the bottom half of each toasted burger bun. Layer a few slices of roasted butternut squash on top of the pesto, followed by the crispy, golden Tomini cheese. Top with the other half of the burger bun to finish.
