Recipe: Tourtiere Du Lac St-Jean 🥧

Description: This traditional French Canadian dish, Tourtiere Du Lac St-Jean, hails from the Northern Quebec region and is renowned for its hearty and flavorful profile. Unlike a typical pie, this dish is a savory delight that combines ground pork, hamburger meat, and potatoes, simmered to perfection in a savory broth. It’s a labor of love that requires some time to prepare and cook, but the end result is undeniably worth the effort. Serve it alongside a fresh salad, pickled beets, cucumbers, and tomatoes for a truly authentic experience.

Ingredients:

  • 2 lbs ground pork
  • 2 lbs hamburger meat
  • 15 potatoes
  • 2 cans Campbell’s Beef and Barley Soup concentrate (or beef bouillon concentrate)
  • Water
  • Salt and pepper, to taste
  • Pie dough (enough to line the bottom and cover the top of the pan)

Instructions:

  1. Preparation:

    • Peel and cube all the potatoes, setting them aside.
    • Preheat your oven to 400°F (200°C) and prepare your baking dish. For the full recipe, use a turkey basting pan with a lid. For a smaller recipe, a stock pot will suffice.
  2. Cooking the Meat Mixture:

    • In a large pot, combine the ground pork, hamburger meat, 2 cans of Campbell’s Soup (or beef bouillon concentrate), water, salt, and pepper.
    • Bring the mixture to a boil, then reduce the heat and simmer until the meat is fully cooked.
    • Taste the mixture and adjust seasoning as needed.
  3. Assembling the Tourtiere:

    • Line the bottom of your baking dish with pie dough.
    • Spread half of the cubed potatoes evenly over the dough.
    • Pour the cooked meat mixture over the layer of potatoes.
    • Add the remaining potatoes on top of the meat mixture.
    • Ensure that some of the liquid from the meat mixture is visible through the top layer of potatoes.
  4. Sealing and Baking:

    • Cover the Tourtiere with another layer of pie dough, sealing the edges tightly.
    • Make four slits at the center of the pie dough to allow steam to escape during baking.
    • Cover the dish with foil or a lid and place it in the preheated oven.
    • Bake for 1 hour at 400°F (200°C) until the mixture is boiling.
    • After 1 hour, reduce the heat to 250°F (120°C) and continue baking for 11 hours (or 9 hours for a smaller recipe) until the Tourtiere is fully cooked and the flavors have melded together.
  5. Serving:

    • Once baked, remove the Tourtiere from the oven and let it cool slightly.
    • Slice and serve immediately, enjoying the warm and comforting flavors of this traditional French Canadian dish.

Serving Suggestions:

  • Serve the Tourtiere Du Lac St-Jean with a side of fresh salad, pickled beets, cucumbers, and tomatoes for a complete and satisfying meal.
  • Pair it with a glass of red wine or a hot cup of apple cider for a cozy dining experience, perfect for chilly winter nights or festive gatherings.

Tips:

  • To save time, consider preparing the pie dough and peeling/cubing the potatoes in advance.
  • Feel free to customize the filling by adding your favorite herbs and spices to the meat mixture for extra flavor.
  • Leftovers can be stored in the refrigerator for up to 3 days or frozen for future enjoyment.

Bon appétit! 🇨🇦✨
