Garlic Kheer Recipe (Indian Dessert)

Garlic Kheer is a unique and flavorful dessert that combines the mild pungency of garlic with the sweetness of milk and sugar. While you may often prepare rice or dry fruit kheer, this recipe offers a refreshing twist using garlic as the key ingredient. Ingredients:

Sugar 1/2 cup
Milk 750 ml
Vinegar (or white) 3 teaspoons

Instructions:

  1. Prepare Garlic:
    Begin by boiling 1 cup of water in a pan with the chopped garlic and 1 teaspoon of vinegar over medium heat. This helps in reducing the strong odor of garlic, making it more suitable for the dessert.

  2. Boil Milk:
    In another pan, start heating 750 ml of milk on low heat. Keep stirring to prevent it from burning.

  3. Strain the Garlic:
    After 4 minutes of boiling the garlic, strain it through a fine sieve. To remove any remaining pungent aroma, repeat the process by adding another cup of water and 1 teaspoon of vinegar to the garlic, and boil it again for a few minutes.

  4. Combine Garlic and Milk:
    Gradually add the strained garlic into the milk. Stir well and cook on medium heat, allowing the mixture to simmer for 10-15 minutes until the kheer thickens. Stir occasionally to prevent it from sticking to the bottom of the pan.

  5. Sweeten the Kheer:
    Add sugar into the mixture and stir until completely dissolved. Continue cooking on medium heat, stirring regularly until the kheer reaches the desired consistency.

  6. Flavor with Cardamom and Rose Water:
    Once the kheer thickens, turn off the heat and add cardamom powder and rose water for a delightful fragrance and flavor.

  7. Serve:
    Allow the kheer to cool slightly before serving. Garnish with rose petals for a beautiful presentation. Serve this garlic kheer as a sweet treat after meals for a unique and nutritious finish.
