Preparation Time: 20 minutes
Cooking Time: 50 minutes
Total Time: 1 hour 10 minutes
Servings: 6

Ingredients

  • 2 cups mashed potatoes
  • 1/4 cup butter
  • 1/4 cup margarine
  • 1/8 teaspoon ground cinnamon
  • 1/8 teaspoon ground ginger
  • 1 cup brown sugar
  • 4 cups all-purpose flour
  • 2 cups thinly sliced apples (approximately 4 medium apples)
  • 1 tablespoon brown sugar
  • 1 tablespoon butter (for brushing the top)
  • 1 tablespoon granulated sugar
  • 1 tablespoon granulated sugar (for the top crust)

Instructions

  1. Preheat the Oven
Begin by preheating your oven to 375°F (190°C). This ensures that the pie will bake evenly and develop a golden, crisp crust.

  2. Prepare the Dough
In a mixing bowl, combine the mashed potatoes, butter, margarine, cinnamon, ginger, and 1 cup of brown sugar. Mix these ingredients thoroughly until well blended. Gradually incorporate 3 1/4 cups of the all-purpose flour into the mixture. This will form a soft dough. Set aside 3/4 cup of this dough for the top crust.

  3. Shape the Dough
On a sheet of waxed paper (or preferably parchment paper for easier handling), pat out the remaining dough into a circle that is slightly larger than your 9-inch pie plate. This will be the bottom crust of your pie.

  4. Transfer the Dough to the Pan
Grease your pie plate generously to prevent sticking. Place the pie plate over the dough circle and carefully lift and invert the dough into the pie plate. Gently remove the waxed paper, making sure the dough fits the plate well. Press the dough into the bottom and sides of the plate.

  5. Prepare the Filling
Arrange the thinly sliced apples evenly over the dough in the pie plate. Sprinkle the apple slices with 2 tablespoons of brown sugar for added sweetness and flavor.

  6. Top the Pie
With the reserved 3/4 cup of dough, pat it into a circle on another piece of waxed paper. Invert this dough circle over the apple filling, peeling off the waxed paper as you go. Crimp and seal the edges of the dough to ensure the filling is enclosed.

  7. Add a Vent and Bake
Cut a small vent in the center of the top crust to allow steam to escape during baking. Place the pie in the preheated oven and bake for 45 to 50 minutes, or until the crust is golden brown and the filling is bubbly.

  8. Finish with a Touch of Butter and Sugar
About 5 minutes before the pie is done, brush the top crust with 1 teaspoon of melted butter. Sprinkle granulated sugar over the top for a sweet, slightly crisp finish.

  9. Cool and Serve
Once baked, remove the pie from the oven and let it cool slightly. Serve warm with a dollop of whipped cream for an extra touch of indulgence. Enjoy!

This Irish Apple Pie, with its tender apples and unique potato-based crust, is sure to become a favorite in your dessert repertoire. Whether enjoyed as a comforting family treat or a special dessert for guests, it’s a delicious way to bring a taste of Ireland into your kitchen. 🍏🥧
