Ingredients

Vegetables:

  • 1 potato, peeled and chopped
  • 2 red carrots, peeled and chopped
  • 3 brinjals (eggplants), chopped
  • 3/4 cup green gram (moong beans)
  • 10 avarekalu (field beans), chopped
  • 5 plums, washed and stem removed
  • 2 green chilies, finely chopped

Powders & Spices:

  • 1 tbsp roasted peanut powder
  • 1 tbsp roasted sesame powder
  • 1 tbsp Goda masala
  • 1/2 tsp cumin seeds
  • 1 tsp mustard seeds
  • 1/4 tsp asafoetida
  • 1/4 tsp turmeric powder
  • Salt, to taste

For Tempering:

  • 1 tbsp oil

Garnish:

  • Fresh coriander leaves, finely chopped
  • 1 tsp lemon juice

Preparation Time: 10 minutes

Cooking Time: 30 minutes


Instructions

  1. Prepare the Tempering:
    Heat oil in a deep pan over medium heat. Add mustard seeds and allow them to splutter. Then, add cumin seeds, sesame seeds, and cook for 10 seconds.

  2. Add Spices:
    Stir in the green chilies, asafoetida, Goda masala, and turmeric powder. Sauté for about 1 minute to release the flavors.

  3. Cook the Base Vegetables:
    Add the chopped potato, green gram, and avarekalu to the pan. Mix well and season with salt. Add a little water, stir, and cover the pan. Let it cook for 10–12 minutes, stirring occasionally.

  4. Add Remaining Vegetables:
    Once the potatoes and legumes are partially cooked, add the brinjal and carrot. Mix well, add 1–2 tablespoons of water if needed, and cook until all the vegetables are tender.

  5. Incorporate Peanuts and Sesame:
    Add the plums, roasted sesame powder, and roasted peanut powder. Stir everything together and let it cook for another 2–3 minutes, allowing the flavors to blend.

  6. Final Touch:
    Turn off the heat and add the lemon juice. Garnish with freshly chopped coriander leaves.

  7. Serve:
    Serve the delicious Bhogichi Bhaji hot with Khandeshi Dal and Phulkas for a comforting and festive meal.
