Soto Ayam for Newlyweds

Ingredients

Spice Paste:

  • 4 large shallots
  • 4-5 cloves garlic
  • 4 candlenuts
  • 1 teaspoon coriander
  • 2-3 segments turmeric
  • 1/4 segment ginger
  • 1/2 segment galangal

Whole Spices:

  • 1 stalk lemongrass
  • 1 bay leaf
  • 2 kaffir lime leaves

For the Soup:

  • 1/2 kg chicken
  • Lime juice
  • 2 stalks green onions, sliced
  • 2 stalks celery, sliced
  • Cabbage (optional)
  • Seasoning (Masako)
  • Salt
  • Sugar

For Soto Sambal:

  • 3 cloves garlic
  • 2 candlenuts
  • 10 red bird’s eye chilies

Instructions

  1. Prepare the Chicken:

    • Boil 1/2 kg of chicken with salt and seasoning until the water reduces to about 1/4 of the initial amount. Shred the chicken once cooked.
  2. Prepare the Spice Paste:

    • Blend the shallots, garlic, candlenuts, coriander, turmeric, ginger, and galangal into a smooth paste.
  3. Cook the Spice Paste:

    • Heat a bit of oil in a pan and sauté the spice paste until fragrant and the color turns slightly brown.
  4. Combine Ingredients:

    • Boil 1000 cc of water in a pot. Once boiling, add the sautéed spice paste along with the lemongrass, bay leaf, and kaffir lime leaves.
  5. Simmer the Soup:

    • Add the shredded chicken to the pot. Season with salt, sugar, and Masako to taste. Adjust the seasoning and taste as needed.
  6. Add Garnishes:

    • Stir in the sliced green onions and celery. Let the soup simmer until everything is well-cooked and the flavors meld together.
  7. Prepare the Soto Sambal:

    • Blend the garlic, candlenuts, and red chilies into a paste.
  8. Serve:

    • Serve the Soto Ayam hot with the Soto sambal on the side for added spice.
