Berry Tiramisu 🍓🍰🍇

Description

Emeril demonstrated making this delicious dessert on Good Morning America. It looked so good I couldn’t wait to try it. I thought it would benefit from adding more fruit–he only called for 1 cup of strawberries. It was awesome. This can easily be halved for 4 generous servings. I highly recommend this dessert if you are looking for a fabulous way to serve the berries of the season!

Ingredients

  • 1 1/2 cups raspberries
  • 1 cup blueberries
  • 3 cups strawberries, hulled and halved
  • 2 tablespoons granulated sugar
  • 11 ounces heavy cream
  • 2 tablespoons confectioners’ sugar
  • 1/2 cup mascarpone cheese
  • 1 mint sprig, for garnish
  • 1/2 cup fresh lemon juice
  • 1 teaspoon cornstarch

For Raspberry Coulis

  • 2 cups raspberries
  • 3/4 cup syrup
  • 1 1/2 tablespoons fresh lemon juice

Instructions

Preparing the Berry Mixture 🍓🍇

  1. Combine Berries and Sugar: In a large bowl, gently stir together 1 1/2 cups of raspberries, 1 cup of blueberries, and 3 cups of hulled and halved strawberries with 2 tablespoons of granulated sugar, 2 tablespoons of Chambord, and 1/2 cup of raspberry coulis. Set aside to macerate while you prepare the other components.

Whipping the Cream 🍦

  1. Whip Heavy Cream: Using an electric mixer on high speed, whip 11 ounces of heavy cream until it thickens and almost doubles in volume. This should take about 3-5 minutes.
  2. Sweeten the Cream: Gradually add 1/4 cup of confectioners’ sugar and 1 tablespoon of Chambord, continuing to whip until stiff peaks form. This will create a luscious, sweetened whipped cream that will add lightness to the dessert.

Preparing the Mascarpone Mixture 🧀

  1. Whip Mascarpone: In a medium bowl, use an electric mixer on low speed to whip 1/2 cup of mascarpone cheese with the remaining 1/4 cup of confectioners’ sugar until smooth and creamy.
  2. Fold in Whipped Cream: Gently fold in half of the whipped cream into the mascarpone mixture, ensuring it is well combined but still light and airy.

Assembling the Tiramisu 🏗️

  1. Layer Pound Cake: Spread half of the pound cake slices in the bottom of a 9×13-inch glass dish.
  2. Add Berry Mixture and Mascarpone: Drizzle the remaining 1/4 cup of Chambord over the cake slices and cover with half of the berry mixture. Spread half of the mascarpone cream over the berries, gently smoothing it into an even layer.
  3. Repeat Layers: Repeat the layers with the remaining pound cake slices, another 1/4 cup of Chambord, the remaining berry mixture, and the remaining mascarpone cream.

Chilling the Tiramisu ❄️

  1. Cover and Refrigerate: Cover the dish tightly with plastic wrap and refrigerate for at least 2 hours and up to 1 1/2 days. This chilling time allows the flavors to meld beautifully and the dessert to set properly.

Preparing the Raspberry Coulis 🍯

  1. Simmer Raspberries: In a medium saucepan over low heat, bring 2 cups of raspberries, 3/4 cup of syrup, and 1 1/2 tablespoons of fresh lemon juice to a simmer. Cook, stirring occasionally, until the berries are very soft, about 10 minutes.
  2. Thicken Coulis: Sprinkle 1 teaspoon of cornstarch over 2 teaspoons of cold water and stir to dissolve. Pour this mixture into the simmering raspberry mixture, cooking until the sauce thickens, about 3 minutes.
  3. Strain and Cool: Strain the mixture through a fine-mesh sieve into a medium bowl, discarding the seeds. Allow the coulis to cool completely, then cover and refrigerate until ready to use. Any leftover coulis can be frozen in a plastic container for up to one month.

Serving the Tiramisu 🍽️

  1. Garnish and Serve: To serve, spoon portions of the tiramisu into individual bowls. Garnish with the remaining whipped cream and mint sprigs for a touch of elegance and freshness. Serve with the remaining raspberry coulis spooned over each serving or passed on the side for guests to add as they like.

Tips and Tricks 💡

  • Fruit Variety: Feel free to mix in other seasonal berries such as blackberries or cherries for a twist on the classic flavor profile.
  • Alcohol-Free Option: If you prefer an alcohol-free version, you can replace the Chambord with a simple syrup flavored with a hint of vanilla or berry extract.
  • Texture: For added texture, consider adding a layer of crushed graham crackers or almond biscotti between the cake and berry layers.
  • Make-Ahead: This tiramisu is an excellent make-ahead dessert, perfect for entertaining. Prepare it the day before your event to allow the flavors to develop fully.

Final Thoughts 🌟

This Berry Tiramisu is a celebration of fresh, vibrant flavors and luscious textures, perfect for showcasing the best berries of the season. The combination of the sweetened mascarpone, whipped cream, and berry coulis creates a harmonious balance that is sure to delight your taste buds. Whether you’re serving it at a summer potluck, a spring gathering, or simply enjoying it on a weeknight, this dessert is guaranteed to impress and satisfy. Enjoy every delightful bite! 🍰🍓🍇🌿
