🕒 Total Time: 2 hours and 12 minutes
👩🍳 Servings: 6
Ingredients:
For the Chocolate Pie Crust:
- 1 cup unbleached flour
- 1/2 teaspoon salt
- 1/4 cup water
- 2/3 cup vegetable shortening
- 1/3 cup sugar
- 1/4 cup baking chocolate (chopped)
For the Chocolate Pie Filling:
- 3 tablespoons unflavored gelatin
- 1/4 cup sugar
- 1/4 teaspoon salt
- 2 cups milk
- 3 egg yolks (slightly beaten)
- 3 squares unsweetened chocolate (1 oz each)
- 1 teaspoon vanilla
- 3 egg whites
- 1/4 teaspoon cream of tartar
- 1/2 cup sugar
- 1 cup heavy cream (whipped)
Instructions:
Chocolate Pie Crust:
- Sift the salt and flour into a bowl, then cut in the vegetable shortening using a pastry blender until coarse crumbs form.
- Add the chopped baking chocolate and water, tossing with a fork until the dough forms.
- Press the dough firmly into a ball and roll it out on a lightly floured surface into a 13-inch circle.
- Loosely fit the dough into a 9-inch pie plate and trim the edges, leaving a 1-inch overhang.
- Fold the extra dough under the edge to form a ridge. Flute the edge and prick the entire surface with a fork.
- Bake at 400°F for 12 minutes or until golden brown. Cool on a rack.
Chocolate Pie Filling:
- In a 2-quart saucepan, stir together 1/4 cup sugar, gelatin, and salt.
- Stir in the milk and slightly beaten egg yolks.
- Add the unsweetened chocolate squares and cook over low heat, stirring constantly until chocolate melts and gelatin dissolves.
- Remove from heat, stir in vanilla, and chill until the mixture resembles unbeaten egg whites.
- Beat egg whites and cream of tartar until foamy; gradually add 1/4 cup sugar, beating well after each addition.
- Continue beating until stiff, glossy peaks form. Smoothly beat the chocolate mixture with an electric mixer at medium speed until it mounds slightly.
- Fold the egg white mixture into the chocolate mixture, then fold in the whipped cream.
- Chill in the refrigerator until the mixture mounds well when spooned.
- Turn the luscious filling into the chocolate pie shell and chill for 2 hours or until set.
To Serve:
- Decorate the pie with puffs of sweetened whipped cream.
- Grate and sprinkle extra chocolate over the whipped cream for an extra touch of chocolatey indulgence.
