Perogies With 3 Different Fillings

Ingredients:

Dough Mushroom Filling Potato & Roasted Garlic Filling Potato, Cheddar, Bacon & Onion Filling
8 cups all-purpose flour 2 tbsp butter 4 large potatoes 6 slices bacon
4 tsp salt 4 cups mushrooms 20 cloves garlic (yes, really!) 1 large onion, diced
1 1/2 cups milk 1/2 tsp salt 1 cup milk 1 1/2 cups shredded cheddar cheese
1 1/3 cups sour cream 1/4 tsp pepper 1/2 cup cream cheese
2 eggs 4 egg yolks Salt and pepper, to taste
Optional: dill weed

Instructions:

  1. Prepare Dough:

    • In a large bowl, whisk together the all-purpose flour and salt until evenly combined.
    • In a separate medium bowl, whisk together the milk, sour cream, and eggs until smooth.
    • Stir the wet ingredients into the dry ingredients until a soft, rough dough forms.
    • Turn the dough out onto a lightly floured board and knead for about one minute, or until smooth.
    • Divide the dough into quarters and wrap each quarter in plastic wrap. Let them rest for 20 minutes.
  2. Prepare Mushroom Filling:

    • On a lightly floured surface, roll out one quarter of the dough into a 17-inch circle.
    • Using a 3-inch round cutter, cut the dough into circles, making them as close together as possible to minimize rerolls.
    • Place a rounded teaspoon of filling in the center of each circle, then fold the dough over the filling to form a semicircle.
    • Pinch the edges together firmly to seal, dust lightly with flour, and place on a baking sheet. Repeat with the remaining dough and filling.
