Ingredients:

  • 1/4 cup fresh lime juice
  • 3 1/2 cups bananas, diced
  • 2 1/4 cups sugar
  • 1/2 cup water

Instructions:

  1. Prepare Ingredients: Start by placing the fresh lime juice in a one-quart measure. Then, peel your bananas and dice them directly into the lime juice. Stir gently with a wooden spoon, ensuring the lime juice coats the bananas to prevent darkening.

  2. Prepare Syrup: In a wide 2Β½-quart saucepan, measure out the sugar and water. Stir well to dissolve the sugar as you bring the syrup to a gentle boil. Cover the pan tightly for the first 2 minutes to allow the steam to wash sugar crystals from the sides of the saucepan. Then, uncover and proceed to the next step.

  3. Cook Banana Mixture: Add the diced bananas (along with the lime juice) into the syrup in the saucepan. Allow the mixture to boil over low heat for approximately 30 minutes or until it thickens to your desired consistency. Stir the mixture often to prevent it from sticking, especially during the last 10 minutes of cooking.

  4. Check for Doneness: To determine if the jam is ready, use a spoon to scrape across the bottom of the pan. If a track forms and slowly closes, or if the jam mounds while stirring, it’s done and ready to be canned.

  5. Can the Jam: Quickly fill hot, sterilized jars with the hot jam mixture, leaving about 1/4 inch of headspace at the top. Wipe the sealing surface of the jars with a clean, damp paper towel to remove any residue. Place the lids on the jars and screw on the bands finger-tight.

  6. Process Jars: Process the filled jars in a boiling water bath for 10 minutes. This step helps to ensure the jars are properly sealed and the jam is safely preserved.

  7. Cool and Set: Once processed, remove the jars from the water bath and allow them to cool upright for 12-24 hours. During this time, a vacuum seal will form, and the jam will set up beautifully.
