Description: 🍰 My aunt made this for Easter, and everyone loved it…no leftovers! It is very simple and makes a nice presentation. I am not a big fan of mandarin oranges, but this cake is divine. I chop up the oranges just because I don’t like big hunks of oranges, but you can leave them whole if you wish. A must try!! Baking time is approximate.

---|---|
| Preparation: Preheat your oven to the temperature indicated on the cake mix box. Spray a 9×13-inch baking pan with cooking spray to prevent sticking. |
| Mix Cake Batter: In a large mixing bowl, combine the eggs, crushed pineapple (with juice), chopped pecans, instant vanilla pudding mix, and mandarin oranges. Using a hand mixer or stand mixer, beat the ingredients together for about 4 minutes until well combined and smooth. |
| Bake: Pour the cake batter into the prepared baking pan, spreading it evenly. Follow the baking time and temperature specified on the cake mix box. Bake until a toothpick inserted into the center comes out clean. Baking time may vary depending on your oven, so keep an eye on it. |
| Cool: Once baked, remove the cake from the oven and let it cool completely in the pan on a wire rack. |
| Prepare Frosting: In a separate mixing bowl, combine the Cool Whip with the remaining crushed pineapple (drained) to make the frosting. Mix until well incorporated. |
| Frost the Cake: Once the cake has cooled, spread the pineapple frosting evenly over the top of the cake using a spatula. For added flair, you can garnish with additional mandarin orange slices or chopped pecans if desired. |
| Chill: Refrigerate the frosted cake for at least 1 hour before serving to allow the flavors to meld together and the frosting to set. |
| Serve: Slice the chilled cake into squares and serve. Enjoy the tropical flavors of mandarin oranges and pineapple in every bite! |
