Nutty Cherry Pie Recipe

Ingredients:

  • 2 cans of cherry pie filling
  • 1 can of crushed pineapple
  • 1 cup of sugar
  • 3/4 cup of cornstarch
  • 2 cups of walnuts

Instructions:

  1. Let the pie shells come to room temperature.
  2. Fit them into an 8×8 baking pan, adjusting as needed to cover the base and sides evenly.
  3. Bake the shells at 375°F for approximately 15 minutes or until they are golden and crisp.
  4. While the shells bake, prepare the filling. In a saucepan, combine the cherry pie filling, crushed pineapple, sugar, cornstarch, and optional food coloring.
  5. Bring the mixture to a gentle boil over medium heat, stirring constantly to prevent any lumps from forming.
  6. Once it reaches a boil, continue to cook and stir for an additional 2 minutes to thicken the filling.
  7. Remove the saucepan from the heat and allow the filling to cool slightly.
  8. Fold in the chopped walnuts until they are evenly distributed throughout the filling.
  9. Once the pie shells have cooled completely, pour the prepared filling into the crust, spreading it out evenly.
  10. Transfer the pie to the refrigerator to chill for at least a couple of hours before serving, allowing the flavors to meld together and the filling to set.
