All-purpose flour 2 3/4 cups
Baking powder 1 tsp
Baking soda 1/2 tsp
Salt 1/2 tsp
Sugar 1 3/4 cups
Unsalted butter 1 cup
Cream of coconut 1 can (15 oz)

Vanilla extract 1 tsp
Buttermilk 1 cup
Salt Pinch
Cream Cheese Frosting As needed
Sweetened flaked coconut As needed

  1. Preheat oven to 350ยฐF.

  2. Prepare pans: Butter and flour two 9-inch-diameter cake pans with 2-inch-high sides.

  3. Mix dry ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, and 1/2 teaspoon salt to blend.

  4. Cream butter and sugar: Using an electric mixer, beat sugar, butter, and sweetened cream of coconut in a large bowl until fluffy.

  5. Incorporate eggs and vanilla: Beat in egg yolks and vanilla extract until well combined.

  6. Combine wet and dry ingredients: On low speed, beat in the dry ingredients mixture, and then buttermilk, each just until blended.

  7. Beat egg whites: Using clean dry beaters, beat egg whites with a pinch of salt in another large bowl until stiff but not dry.

  8. Fold in egg whites: Gently fold beaten egg whites into the batter until fully incorporated.

  9. Divide batter: Divide the cake batter evenly between the prepared pans.

  10. Bake: Bake the cakes in the preheated oven until a tester inserted into the center comes out clean, about 45 minutes.

  11. Cool: Allow the cakes to cool in the pans on a rack for 10 minutes.

  12. Release cakes: Run a small sharp knife around the sides of the pans to loosen the cakes, then turn them out onto racks and let them cool completely.

  13. Assemble: Place one cake layer on a cake plate and spread 1 cup of Cream Cheese Frosting over it.

  14. Add coconut: Sprinkle 1 cup of sweetened shredded coconut over the frosting.

  15. Layer: Top with the second cake layer.

  16. Frost: Spread the remaining frosting over the top and sides of the cake.

  17. Decorate: Sprinkle the remaining coconut over the cake, gently pressing it into the sides to adhere.
