8 Bake on a lower shelf in the preheated oven for about 20 minutes or until the meringue is lightly browned.
9 Cover a wire rack with another sheet of baking paper. Carefully invert the meringue onto the paper and remove the lining paper. Allow it to cool with the coconut side down.
10 Whip the cream until it reaches soft peak stage.
11 Spread the whipped cream evenly over the cooled meringue.
12 Top with sliced mangoes and passionfruit pulp.
13 Roll the meringue firmly from the long side, using the baking paper to guide the roll.
14 Serve the pavlova roll in slices. It may not stay completely neat, but it is undeniably delicious!
