Spinach, Avocado & Mango Salad πŸ₯—

Description: I really enjoy this salad; I think it has a lovely balance of sweetness and bitterness, softness and crunch – and the colors are lovely too. This will make four side salads, or two meal salads.

Total Time: 30 minutes
Servings: 4

Ingredients:

  • 6 cups spinach
  • 4-6 leaves of radicchio
  • 8-12 red radishes
  • 1 ripe mango
  • 1 ripe avocado
  • Juice of 1 orange
  • 3 tablespoons hazelnut oil
  • 1 tablespoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/2 teaspoon black peppercorns

Instructions:

  1. Prepare the Greens: Wash, pick over, and dry the spinach. Similarly, wash, dry, and tear up the radicchio leaves.

  2. Slice the Radishes: Wash and slice the radishes into thin rounds.

  3. Prep the Mango and Avocado: Peel and slice the mango and avocado. Pro tip: it’s easiest to cut the avocado in half, remove the pit, and lift out slices with a flattish spoon.

  4. Assemble the Salad: In a large bowl, mix together the spinach, torn radicchio leaves, sliced radishes, peeled and sliced avocado, and peeled and sliced mango. Gently toss to combine.

  5. Prepare the Dressing: In a small bowl or jar, whisk together the orange juice, Dijon mustard, salt, pepper, and hazelnut oil until well combined.

  6. Toss with Dressing: Pour the dressing over the salad and toss gently to coat all the ingredients evenly.

  7. Serve: Once the salad is well coated with the dressing, it’s ready to serve! Enjoy the delightful balance of flavors and textures in every bite.
