Instructions:

  1. Prepare the Crust:

    • In a bowl, combine the graham cracker crumbs, maple syrup, and canola oil.
    • Mix until well combined, then evenly press the mixture onto the bottom and up the sides of a 9-inch pie plate. Set aside.
  2. Make the Filling:

    • In a small bowl, dissolve the kudzu in 2 tablespoons of the soy milk. Set aside.
    • In a saucepan, combine the remaining soy milk, agar-agar flakes, maple syrup, orange zest, cardamom, and sea salt.
    • Bring the mixture to a boil, then reduce the heat and simmer for 5 minutes.
    • Add the dissolved kudzu, stirring constantly until the mixture thickens enough to coat the back of a wooden spoon.
    • Stir in the vanilla.
  3. Incorporate the Mango:

    • Fold in the pureed mango and continue stirring for about 1 minute, ensuring the mixture is well combined.
  4. Assemble the Pie:

    • Remove the saucepan from the heat and pour the filling into the prepared crust.
  5. Chill and Serve:

    • Refrigerate the pie for at least 1 hour, or until the filling is set.
    • Once set, the pie can be served immediately or stored covered in the refrigerator for up to 3 days.
