Instructions

  1. Prepare the Pineapple: Start by slicing the pineapple into 1/2 cm thick rounds. Remove the outer skin from each slice. From these slices, take 200g of pineapple and cut it into thin strips, setting them aside for later use.

  2. Make the Batter: In a large mixing bowl, combine the eggs and brown sugar. Using an electric mixer, beat the mixture until it becomes light and fluffy. Add a pinch of salt to enhance the flavor.

  3. Incorporate Coconut Oil and Dry Ingredients: Add the coconut oil to the egg and sugar mixture, continuing to mix until well combined. Gradually sift in the all-purpose flour and baking powder, mixing gently with a hand whisk. This will ensure there are no lumps in the batter.

  4. Add Coconut and Mix: Add the shredded coconut to the batter and stir with a spatula until it’s evenly distributed throughout.

  5. Prepare the Pan: Grease a round cake pan with a diameter of 16 cm (6.5 inches) and a height of 10 cm. You can use a bit of coconut oil for greasing. Once the pan is ready, pour the cake batter into it, smoothing the top with the back of a spoon.

  6. Garnish with Pineapple and Coconut: Take 100g of the prepared pineapple slices and arrange them neatly on top of the cake batter, starting from the outer edge and working inward. Sprinkle a generous amount of shredded coconut over the surface of the cake.

  7. Bake the Cake: Preheat the oven to 180°C (350°F) in static mode. Place the cake in the middle rack of the oven and bake for approximately 75 minutes. Check the doneness by inserting a toothpick into the center of the cake – if it comes out clean, the cake is ready.

  8. Cool and Serve: Once baked, remove the cake from the oven and allow it to cool slightly. After about 10 minutes, carefully remove it from the pan and place it on a wire rack to cool completely. Once cooled, slice and serve.
