Description:

If I don’t tell anyone that it’s fruitcake, this disappears at parties. It has a very light texture and looks like unfrosted carrot cake at first glance.

Ingredients:

  • 3 eggs
  • 3/4 cup brown sugar
  • 1 jar maraschino cherries (reserve juice)
  • 1/4 cup powdered milk
  • 1 can crushed pineapple
  • 2/3 cup raisins
  • 2 cups dates, chopped
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1 tsp ground cloves
  • 1 tsp ground allspice
  • 1 tsp ground ginger
  • Powdered sugar, for dusting
  • Orange peel (from 1 orange)
  • Vegetable oil

Instructions:

  1. Prepare Dry Ingredients:

    • Sift together all-purpose flour, whole wheat flour, baking soda, ground cinnamon, ground cloves, ground allspice, and ground ginger.
    • Set aside.
  2. Prepare Wet Ingredients:

    • Using an electric mixer, beat eggs until fluffy.
    • Gradually add brown sugar, reserved juice from the jar of cherries, powdered milk, crushed pineapple, and vegetable oil.
    • Ensure the powdered milk dissolves completely before adding the oil.
  3. Combine Wet and Dry Ingredients:

    • Slowly incorporate the flour mixture into the wet ingredients until well combined.
  4. Add Fruits:

    • Stir in the raisins, chopped dates, and maraschino cherries.
  5. Prepare Cake Pans:

    • Grease three 9-inch round cake pans.
  6. Bake:

    • Preheat the oven to 325 degrees Fahrenheit (165 degrees Celsius).
    • Divide the batter evenly among the prepared cake pans.
    • Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.
  7. Cool and Serve:

    • Allow the cakes to cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
  8. Final Touch:

    • Once cooled, dust the cakes with powdered sugar for a festive finish.
