Instructions:

  1. Preheat Oven: Preheat your oven to 350Β°F (175Β°C).
  2. Prepare Crust: In a mixing bowl, combine 1/4 cup sugar, margarine, and nonfat cottage cheese. Beat at medium speed until smooth. Add flour and stir well.
  3. Press Crust: Press the mixture into the bottom and 1 2/3 inches up the sides of a 9-inch springform pan coated with cooking spray.
  4. Bake Crust: Bake the crust at 350Β°F (175Β°C) for 12 minutes. Allow it to cool.
  5. Lower Oven Temperature: Reduce the oven temperature to 300Β°F (150Β°C).
  6. Prepare Filling: In a food processor, combine low-fat sour cream, cream of coconut, remaining sugar, eggs, water, and unflavored gelatin. Process until smooth, scraping the sides of the processor bowl as needed.
  7. Bake Cheesecake: Pour the cheese mixture into the prepared crust. Bake at 300Β°F (150Β°C) for 1 1/2 hours or until almost set.
  8. Let Cool: Turn off the oven and let the cheesecake stand inside for 1 hour with the door closed.
