Instructions:

  1. Prepare the Base: In a food processor, combine the golden raisins, onion, garlic, tomato paste, bananas, and enough vinegar to facilitate blending. Process until smooth.

  2. Cook the Mixture: Transfer the pureed mixture to a large stainless steel or enamel pot. Add the remaining vinegar, 4 cups of water, brown sugar, salt, and cayenne. Bring the mixture to a boil over medium-high heat, stirring constantly.

  3. Simmer: Reduce the heat to medium-low and simmer the mixture, uncovered, for 1 and 1/2 hours, stirring frequently. If the ketchup begins to stick to the bottom of the pan, add a small amount of water to prevent burning.

  4. Spice it Up: After 1 and 1/2 hours, add the light corn syrup, ground allspice, ground cinnamon, nutmeg, ground black pepper, and ground cloves. Continue to cook the mixture for an additional 15 minutes.

  5. Test for Consistency: To check if the ketchup has reached the desired consistency, place a small dollop of the mixture on a frozen plate. If no liquid forms around the dollop, the ketchup is ready.

  6. Add Rum: If desired, stir in dark rum to taste. Bring the mixture back to a boil, stirring constantly, then remove it from the heat.

  7. Jar and Process: Ladle the hot ketchup into clean, hot jars, leaving 1/4 inch of headspace. Seal the jars tightly. Process the jars in a boiling water bath for 20 minutes for pint-sized jars or 15 minutes for half-pint jars.

  8. Allow to Ripen: After processing, allow the jars of ketchup to ripen for at least 1 month before using. This allows the flavors to meld and intensify.

This Caribbean ketchup is a flavorful addition to your pantry, perfect for adding a tropical twist to your favorite dishes. Enjoy its unique blend of sweet and spicy flavors with every bite! 🍅🌴
