Ingredients:

  • 1 pound shrimp (jumbo or large, peeled and deveined)
  • 1 fresh pineapple
  • 3 tablespoons butter, melted
  • 1/4 cup barbecue sauce
  • 1-2 chipotle chiles in adobo, chopped
  • 2 garlic cloves, minced
  • 1/4 teaspoon salt
  • 1/2 cucumber, chopped
  • 1/2 jicama, chopped
  • 1 tablespoon lime juice
  • 1 tablespoon lemon juice
  • 1/4 cup fresh cilantro, chopped

Instructions:

  1. Prepare Skewers: Begin by soaking 8 wooden skewers (6-8 inches) in water for 30 minutes to prevent burning during grilling. Alternatively, metal skewers can be used if available.

  2. Prep Pineapple: Cut the fresh pineapple lengthwise into 1/2-inch thick slices. Reserve some pineapple for the relish by chopping enough to measure 1/2 cup. Set aside.

  3. Create Pineapple Planks: Halve each pineapple slice crosswise, resulting in 8 pineapple planks. Brush both sides of the planks with 1 tablespoon of melted butter. Set aside.

  4. Prepare Shrimp Marinade: In a medium bowl, combine the barbecue sauce, chopped chipotle chiles, minced garlic, remaining melted butter (2 tablespoons), and stir well.
